With spring just around the corner, it's time to get out those creative juices and start thinking about the new season's menu - and one of the best ideas for springtime meals is to whip up some rice bowl recipes. These are quick and easy foods that are perfect for any kind of occasion - they're healthy, convenient, and usually just as tasty as they are delicious. Here's to spring!

The top picks for my number one rice bowl recipes for this year are Cauliflower Rice, Roasted Red Potatoes with Yogurt, Buffalo Chicken Fajitas, and Southwestern-Based Cactus Appetizers. To get you started, I share some of my best korean rice bowl, roasted potato, and buffalo chicken fajitas. Then, you'll also discover helpful tips and hints to help you make the tastiest bowls, easy to prepare, and just as enjoyable to eat. Let's get cooking. Make sure your ingredients and cooking methods are all ready before starting.

The Cauliflower Rice recipe is one that I love to cook, especially if it's served on a cool spring night. It's always one of my favorite meal choices for dinner, breakfast, or lunch. For this one, you just need to get creative by using either brown rice or whole wheat brown rice instead of the white variety. Also, add carrots, peanuts, and roasted red bell pepper into the mix for extra flavor. Serve with steamed broccoli and baked tomatoes for a delicious and flavorful dinner. Roasted red potatoes also go great with cauliflower rice; serve with roasted red potatoes and baked tomatoes for a healthy and delicious weeknight meal.

The second dish I want to share with you is my version of Southwestern-Based Cactus Appetizers. I have a hard time trying to avoid putting shredded cactus in my rice bowls, even if it's just in the occasional meal. If you're going to serve the rice pilaf, I recommend doing so on the side or as an appetizer. It doesn't take long to prepare and is relatively cheap, making it a great addition to your healthy diet.

Here's another one of my quick and easy Southwestern-Based Cactus Appetizers that I serve at my meals. This is my take on the traditional bean dip which was often enjoyed during the pre-dinner cocktail hour. For this one, I use canned pecans instead of roasted ones for added flavoring and flavor depth. For preparation, I simply combine two cups of skim milk, three tablespoons each of garlic powder and salt, a tablespoon of fresh cilantro, two-thirds cup of soy sauce, and four to five drops of lemon juice. Set aside until ready to serve and heat a small saucepan to bring the milk to a boil while stirring in the pecan seasoning mixture until it becomes smooth and creamy.

If you find these types of recipes intriguing, you'll find a wealth of other delicious Asian Inspired recipes for you to try out. The possibilities are endless! I love experimenting with different flavors and textures so that I can offer my guests the very best tasting and most delicious meals that they've ever had. And one of the best parts is that you don't need a great deal of start-up capital or expertise to whip up these delightful dishes. A few ingredients, your trusted spices, some fruits or vegetables, and maybe even some cheeses, and you're all set to have a weeknight dinner that is not only very delicious but also healthy too.
